Riseria Merlano is a highly respected rice plantation in the upper reaches of the Po Valley, located near the wine-growing areas of Ghemme and Gattinara. A relatively small single farm, Riseria Merlano maintains its simple organic farming with strict quality controls. Paul Ferrari first tasted Riseria Merlano's rice while dining at Cesare Giaccone's world-famous restaurant Da Cesare. We are proud to feature two of this producer's outstanding rice.
Arborio's capacity to expand and absorb flavors, and to release enough starch to produce a creamy texture, are legendary.
