Although no grape flavor gets into the cheese, the skins trap the moisture during the three-month aging process, creating a supple yet tangy effect. Agour Ossau-Iraty - Imported from the French Pyrenees, Agour is aged for a minimum of 6 months, giving it a quality and complexity rarely seen.
